{"id":555,"date":"2012-12-19T12:57:44","date_gmt":"2012-12-19T02:57:44","guid":{"rendered":"http:\/\/vc.id.au\/licktheplateclean\/?p=555"},"modified":"2012-12-19T17:26:41","modified_gmt":"2012-12-19T07:26:41","slug":"555","status":"publish","type":"post","link":"https:\/\/vc.id.au\/licktheplateclean\/?p=555","title":{"rendered":"The other Maggie&#8217;s Christmas feasts"},"content":{"rendered":"<div class=\"fcbkbttn_buttons_block\" id=\"fcbkbttn_left\"><div class=\"fcbkbttn_like \"><fb:like href=\"https:\/\/vc.id.au\/licktheplateclean\/?p=555\" action=\"like\" colorscheme=\"light\" layout=\"standard\"  width=\"450px\" size=\"small\"><\/fb:like><\/div><\/div><p>We have had a few laughs in this particular family in the lead up to and planning of the\u00a0 foodie side of Christmas celebrations.<br \/>\nFine tuning several menus according to seasonal produce, weather and meal and presentation style and number of guests has been a lot of fun and two family celebration menus have been pretty much nailed.<\/p>\n<p>Then to watch the Christmas cooking shows or read the sumptuous recent issue foodie magazines and discover many of the menu items offered are what I have chosen!<br \/>\nCries of &#8220;oh, we are doing that mum&#8221; or\u00a0 &#8220;They have stolen my idea&#8221; \ud83d\ude09 or &#8220;You are just ahead of the times&#8221; ring out as we indulge in foodie media.<br \/>\nSo, for what it is worth, I am sharing with you my two Christmas Feasts:<\/p>\n<p>Feast One:<br \/>\nI love providing nice food for people, and a family Christmas gathering is such a wonderful opportunity to show my love by\u00a0 providing generous flavours and delicious morsels with something a bit different.<\/p>\n<p>Last Saturday, 17 gorgeous family members gathered around the white cloth draped table for scintillating conversation, uninhibited laughter and delight in being in each others presence (and the delight of some presents too).<br \/>\nI tossed around the idea of an entree, but decided that it was not actually needed, so buffet style we chose from:<br \/>\n*cold smoked chicken<br \/>\n*double smoked leg ham<br \/>\n*Warm side of salmon poached in white wine, celery, bay leaf, dill and peppercorns.<br \/>\n*roasted, peeled and wedged beetroot and watercress salad with a horse radish sour cream dressing (served separately)<br \/>\n*My mum&#8217;s requested potato salad<br \/>\n*A green salad, comprising of lettuce, shaved fennel, blanched green beans with a caper dressing, made by my brother.<br \/>\n*Several loaves of my aunt&#8217;s fresh home made bread.<br \/>\nIt was a wonderful, tasty and texture and\u00a0 flavour balanced meal.<br \/>\nI did regret, however, that I left too much stalk on the watercress. Some was quite tough. Next time I will get over my disdain for wasting food, and just pick the leaves. Apart from that, the beetroot, watercress and horse radish went superbly with the salmon. And much to my relief, the salmon was not over cooked and got Quality Controllers stamp of approval.<\/p>\n<p>For dessert, I had made individual delicately orange infused pannacottas served with a zingy orange and fruit mince sauce and cinnamon puff pastry palmier.<br \/>\nOr a lime Splice ice cream.<\/p>\n<p>And coffee and chocolates.<\/p>\n<p>A feast in many peoples view, not only to celebrate good relationships, but especially to celebrate the Lord of the eternal feast\u2013Jesus.<\/p>\n<p>Feast Two:<\/p>\n<p>Christmas Day.<br \/>\nYou are lucky\u2013you are getting a sneak preview and posting this will test who in my family reads this!! I am relinquishing it to you, just in the hope it may inspire someone else out there! Feel free to comment if it does!<br \/>\nThe foodie side of the day is intended to go like this:<br \/>\nBreakfast\u2013French toast style panettone, with Greek yoghurt, fresh figs and honey drizzled over. Or maybe croissants&#8230;.<br \/>\nSecond Breakfast\u2013Joke, even though I get called Hobbit.<br \/>\nMorning tea at church\u2013I will provide Christmas fruit mince Eccles cakes\u2013lighter than shortcrust tarts.<br \/>\nFor lunch I have a slightly retro theme going on\u2013<br \/>\n<span style=\"text-decoration: underline;\">Entree\u2013<\/span><br \/>\n*Prawn cocktail with my requested mango mayo<br \/>\n<span style=\"text-decoration: underline;\">Main-Buffet style<\/span><br \/>\n*&#8221;Hot Smoked&#8221; salmon,<br \/>\n*Turkey Breast rolls with a choice of stuffings cooked separately (still fine tuning this one\u2013probably lemon and sage or pistachio and rosemary??)<br \/>\n*Homemade cranberry relish, gravy,<br \/>\n*Lime and ginger glazed leg of ham,<br \/>\n*Green beans with lemon and garlic,<br \/>\n*Roast rosemary baby potatoes,<br \/>\n*M-I-L&#8217;s traditional carrot and pineapple salad,<br \/>\n*Gourmet green summer salad.<br \/>\nStill thinking.<br \/>\n<span style=\"text-decoration: underline;\">Dessert-<\/span><br \/>\n*Individual home made plum puddings, spiced whipped brandy butter,<br \/>\n*Individual Pink Mascato and berry jellies,<br \/>\n*Hazelnut and cranberry meringue tortes,<br \/>\n*Nan&#8217;s vanilla custard,<br \/>\n*Orange scented whipped cream.<br \/>\n<span style=\"text-decoration: underline;\">Afternoon tea-<\/span><br \/>\nHome made Chai tea and Christmas fruit cake, laced with Port. Or nothing.<br \/>\n<span style=\"text-decoration: underline;\">Dinner-<\/span><br \/>\nI am not a Hobbit, so don&#8217;t really need dinner at this stage, although notoriously people pick at the ham. Or the turkey. Or the nuts and cherries in bowls scattered around the place.<br \/>\n<span style=\"text-decoration: underline;\">Supper-<\/span><br \/>\nInterchangeable with Afternoon tea.<\/p>\n<p>I believe it will all go well, but the proof of the pudding is in the eating.<\/p>\n<p>I hope you have a wonderful time with family and friends and caring for the lonely and less fortunate, and a Christmas celebration which is just that: &#8220;Christ&#8217;s mass&#8221;\u2013the celebration of Jesus.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We have had a few laughs in this particular family in the lead up to and planning of the\u00a0 foodie side of Christmas celebrations.
