Ricotta and Berry Hotcakes

Ing:
1 1/3 cups fresh ricotta
3/4 cup milk
4 eggs separated
1 cup plain flour
1 tsp baking powder
pinch salt
50 g butter
1/2 cup berries

Method:
Mix ricotta, milk, egg yolks in a bowl.
Sift flour, baking powder, salt into another bowl.
Add to the ricotta mix and combine gently. Fold in berries.
Beat egg whites until stiff peaks.
Fold egg whites into berry batter.
Fry hot cakes (about 2 tbsp per cake) in buttered pan until golden each side.
